Mediterranean Israeli Couscous Salad

Ingredient Notes

Israeli (pearl) couscous vegetable stock cherry tomatoes green onions parsley pomegranate arils kalamata olives feta cheese fresh lemon juice olive oil salt & pepper

Boil the vegetable stock in a saucepan, add the couscous and cook according to package instructions.

Drain the couscous and rinse with cool water. Now transfer it to a large bowl.

Add in your cherry tomatoes, pomegranate arils, green onions, parsley, olives, and feta.

To make the dressing, whisk together the lemon juice, garlic, salt, and pepper in a bowl.

Now slowly add in the olive oil while whisking.

Add the dressing to the salad ingredients and toss to combine.

Serve chilled or at room temperature and enjoy!
