Apple and Brie Stuffed Chicken

Ingredients

chicken breasts salt + black pepper brie cheese apple slices olive oil butter onion dry white wine all-purpose flour chicken broth maple syrup cider vinegar whole grain or Dijon mustard fresh rosemary sprigs

Create a pocket in each chicken breast by slicing horizontally in the middle. Season the inside and outside with salt and pepper.

Now stuff the pockets with apple slices and brie cheese. You can use toothpicks to secure the pockets.

Heat up the olive oil and butter in a large skillet and cook your chicken breasts until they get a nice sear on both sides.

In the same skillet, add in the onions and cook for 2-3 mins before adding the apple slices. Season with salt.

Pour the wine in the skillet after cooking the apple slices for 2 more mins and let the wine reduce by half.

Now add in the flour and stir. Cook it for about a min or so until the flour gets mixed well and cooks up a bit.

Add the broth, maple syrup, mustard, cider vinegar, and rosemary sprigs to the pan.

Bring the mixture to a boil and reduce the heat to low. Let it simmer for 5 more mins and adjust seasoning as necessary.

Add the chicken back to the skillet, cover, and let it cook for 8-10 mins until the chicken is cooked through.
