Ancient Grains Salad


dry farro pitas the kind with pockets olive oil  salt and pepper Za’atar seasoning baby arugula   flat-leaf parsley leaves mint leaves   green onion thinly sliced  dried cranberries shaved Parmesan cheese  extra virgin olive oil freshly squeezed lemon juice honey

Start by boiling farro in a large pot according to package instructions. Rinse and set aside.

Now make the pita chips. Cut the pitas into two rounds by cutting around the edges.

Brush both sides of the pita with olive oil, and sprinkle with kosher salt and za'atar seasoning.

Cut up the pitas into triangles and spread on a baking sheet in a single layer.

Bake in the preheated oven for five minutes. Flip halfway through to brown evenly. Set aside.

Make the dressing by mixing together the olive oil, lemon juice, salt, black pepper and honey.

Now assemble the salad! Start by adding your veggies and farro in a large bowl, followed by the pita chips.

Add in the Parmesan cheese and the dressing and toss.
