Chicken Satay Rice Bowls

Cut the chicken breasts into 1/2 inch strips and season with some salt.

In a large skillet, heat up some peanut oil and stir fry the chicken. Remove to a plate..

Now in the same skillet, add in the tomato paste, garlic, chile paste, and cook for about 30 seconds until fragrant.

Time for the good stuff!  Add the chicken broth, brown sugar, peanut butter, and hoisin sauce and cook.

Add the cooked chicken to this sauce and stir until the sauce coats it perfectly and the chicken is warmed through.

Serve over rice and garnish with cilantro, chopped peanuts, and enjoy!
