Potatoes

I like to use Yukon gold potatoes that are on the smaller side – 1 1/2 to 2 inches in diameter. But if you want to go for the baked potato classic, smaller russet potatoes also work well.

Look for potatoes that are firm and free of any bruises or soft spots for the best potato bites.

Bacon

Use thick-cut bacon for a meaty, smoky flavor. Cook the bacon until it is crispy, then chop it into small pieces.

Cheddar cheese

Use a good-quality sharp cheddar cheese for maximum flavor. You can also experiment with different cheeses, such as pepper jack or gouda, to give your potato bites a unique twist.

Sour cream

Choose a full-fat sour cream for the best flavor and texture. You can also use Greek yogurt as a substitute if you prefer.

Olive oil

Use a good-quality extra-virgin olive oil to coat the potatoes before baking. This will help them crisp up and develop a golden-brown color.

Green onions or chives

Finely chop the green onions or chives to add a fresh, herbaceous flavor to the potato bites. You can also use parsley or cilantro if you prefer.

What kind of potatoes make the best potato bites?

I like a waxier variety like Yukon Gold or red potatoes for these potato bites, but the classic choice for baked potatoes is, of course, russet potatoes.

If you can, try to choose potatoes that are around 1 1/2 to 2 inches wide, which makes the perfect bite-size slice.

I used a mandoline to slice them to exactly 1/4 inch thick, but you can definitely eyeball this with a knife. You can also slice them thicker, up to 1/2 an inch if you like a heartier bite. You will need to increase the initial baking time for thicker slices.

I didn’t peel them as I like the rustic look, but this is totally up to you! Be sure to scrub them well if you choose not to peel them.

Step by Step Instructions

1. Preheat the oven and grease a baking sheet with olive oil.

2. Using a mandoline or knife, slice the potatoes into 1/4 inch thick slices and arrange them in a single layer on the baking sheet.

3. Give the potato slices a light brush with some extra olive oil and season with salt and pepper.

4. Bake your potatoes in the oven until they are lightly golden and tender.

5. Take your potatoes out of the oven and sprinkle your cheese on them. Broil for a minute or two.

6. Allow the potatoes to cool for 5-10 minutes on the baking sheet, then transfer them to a serving platter using a spatula.

7. Add a small spoonful of sour cream on top of the potatoes, followed by a sprinkle of bacon bits and green onions.

What else can I top these baked potato bites with?

These adorable little potato slices are a total blank canvas.

Anything you might think about putting on a cracker, for instance, is fair game! Some ideas:

  • Monterey Jack, avocado and salsa

Storage Instructions

To store loaded potato bites, place untopped potato bites in an airtight container and refrigerate for up to 3-4 days. If you have leftover potato bites, you can also freeze them. After baking, let them cool to room temperature, then transfer to a freezer-safe container or bag. They can be frozen for up to 2-3 months. To reheat, bake them in the oven at 350°F (175°C) for 15-20 minutes or until heated through.

Avoid microwaving the potato bites as they may become soggy.

Ingredients

  • 2 lbs Small-medium size Yukon Gold potatoes* about 1 1/2 to 2 inches in diameter
  • olive oil
  • salt and pepper to taste
  • 1/2 cup grated sharp cheddar cheese
  • 3 slices bacon, cooked and chopped
  • 2 green onions or chives, thinly sliced
  • 1/3 cup sour cream or crème fraiche

Instructions

  • Preheat oven to 375 degrees F. Grease a large baking sheet with a tablespoon of olive oil.
  • Slice the potatoes into 1/4 inch thick slices, using a mandoline or knife, and spread the slices in a single layer on the prepared baking sheet. Brush lightly with additional olive oil and sprinkle with salt and pepper to taste.
  • Bake potato slices for 20-25 minutes until lightly golden and tender.
  • Turn the broiler on. Sprinkle grated cheese evenly on the potato slices and broil for a minute or two, until cheese is melted and bubbly.
  • Let potatoes cool for 5-10 minutes on the baking sheet and remove to a serving platter with a spatula.
  • Top with a dollop of sour cream, a little bacon and a sprinkle of green onions.
