Chicken Tortilla Soup

Last night, as a monster blizzard blew through town, I thought about this soup. (Instead we had a frozen pizza but that’s neither here nor there). The truth is, for me, this chicken tortilla soup is the ultimate cold-weather comfort food. The heat from the chipotle chile warms you right up from the inside, and you can whip it up in under half an hour, so you can get back under your blanket on the couch ASAP.

Banana Coconut Granola

Granola is a nice thing to have around the house. It’s easy to make, it keeps well, it makes a healthy, hearty breakfast, and it’s great for guilt-free snacking. The grocery store variety is, health-wise, probably better than Fruity Pebbles, but I was surprised to find the sugar levels between the two are not as different as you’d think.

Buffalo Chicken Salad

I looooooove chicken wings.

Love ’em.

Back when my metabolism could handle it (a long time ago!), I used to spend way too much time in those chicken wing places that you usually find in strip malls. You know, the kind that feature all manner of sports on a big screen TV and not much else? Except the wings, of course.

There were always a dozen or so varieties of wings, but for me, it was all about the classic buffalo sauce. Not the crazy blazing hot stuff, but the tamer “medium” version. With blue cheese dressing for dipping of course, and the requisite carrot and celery sticks on the side (healthy!)
